I am far from being a good cook, but what am I good at is whipping up a yummy meal in a matter of moments when there’s not much in the cupboards. And tonight was no exception!
I had already eaten a big lunch, so I decided I would just cook some vegetables to begin with.
I chopped 3 large garlic cloves and added them to the pan along with 2 small tomatoes. A bit of extra virgin olive oil, then let them cook for over a medium to high heat for a minute or two.
In the meantime, I chopped up some broccoli, carrots, cauliflower and kale, then added them in at the last second.
As I was looking at it, I thought to myself, “But this looks like a weeknight dinner” so I quickly checked the cupboards for further inspiration. The first thing I saw was some couscous. I’m not sure about you, but I’m not the most skilled couscous cooker. I’m just always unsure as to what sauce to put with it, but I was willing to give it a go.
So I sprinkled the couscous into the pan, and poured in some water (enough to cover it).
After a few minutes, the water was absorbed and I was ready to add the final touches. So I opened the refrigerator and pulled out a few things that I thought would suit the dish. So in went a knob of butter (essential in couscous!), a small drizzle of mayonnaise and some sweet chilli sauce.
I knew something was still missing. Salt? No. Pepper? Not really necessary. Then it hit me! It needed a sprinkle of parmesan cheese.
I mixed it through, served it in a bowl with a spoon….and wow! It was DELICIOUS!!! And once again, I proved how easy it is to make an inexpensive, healthy, and best of all tasty meal from scratch in less than 10 minutes.

Sounds yummy
My dinner was a quick throw together aswell, no planning just whatever I could find I cooked- ended up with a pumpkin, spinach and feta resotto sort of thing- very nice
